Couscous | Yassine
Couscous is a typical Moroccan dish. It is traditionally served in a large plate in the middle of the table. While eating with family and friends, people talk about the day and spend time together. Since Yassine is now in Germany, he misses this tradition.That is why he has learned to cook Couscous according to his mother's recipe. Normally couscous is served with chicken. Preparation:
- Clean zucchini, carrots, white cabbage, Hokkaido pumpkin, kohlrabi, as well as tomatoes and cut into large pieces. Rinse the chickpeas in a sieve and drain. Fry everything together briefly in hot oil and then deglaze with broth. Cover and stew for about 25 minutes at medium heat. Season to taste with cumin, paprika powder, salt and pepper.
- Cut onions into rings and fry in oil. Add raisins and fry. Sprinkle cinnamon over it and add a piece of butter.
- Pour the hot vegetable stock over the couscous in a bowl and let it swell for about 10 minutes. Loosen the couscous with a fork.
- Pile up the couscous in a large flat bowl. Arrange the vegetables decoratively and garnish with cinnamon onions.
